What is cadmium, and what are its health effects?

To shed light on these questions, Quotidien welcomes Dr. Pierre Souvet, a cardiologist and president of the Association Santé Environnement France (Asef). This specialist has been studying the harmful effects of this heavy metal for many years.

Foods we consume regularly, such as pasta, bread, potatoes, pastries, breakfast cereals, and even chocolate, may contain this heavy metal, which is known for its high toxicity and carcinogenic properties. The French population is particularly affected by this contamination, with exposure rates three to four times higher than those observed in most other European countries. This is according to the French Agency for Food, Environmental and Occupational Health & Safety (ANSES), which published an in-depth study on this issue in March 2026.
